Nose

Intensely aromatic with overripe tropical fruits — mango and papaya — layered over a distinctly funky, almost agricole-like grassy character. The sherry cask adds dried fig and a touch of leather.

Palate

Lively and textured. The sugarcane juice base delivers a raw, vegetal sweetness that clashes productively with the sherry cask's dried fruit and nut character. Mid-palate, there's a spiced warmth and a subtle oakiness that belies the short aging period.

Finish

Long and expressive, with lingering tropical fruit, dried apricot, and a clean, slightly funky close.

The Story

Distilled by Michel Sajous's fellow Haitian artisan at the Le Rocher distillery in Pignon, this clairin is made from estate-grown sugarcane, fermented with wild yeast, and aged in ex-sherry casks selected by Italian importer Velier.
