Rhum Barbancourt 8 Year Old Reserve Spéciale
Barbancourt · Société du Rhum Barbancourt
Barbancourt 8 Year is one of the great bargains in aged spirits. Made from fresh sugarcane juice in the Haitian tradition and aged in Limousin oak, it occupies a unique space between agricole and traditional column-distilled rum. It's unpretentious, deeply flavorful, and a reminder that provenance outweighs price.
Nose
Brown sugar and dried tropical fruits — mango, dried banana — lead the way. Oak and a thread of vanilla follow, with a distinctive grassy, almost agricole-like freshness beneath the aged character. There's a hint of orange peel and light coffee.
Palate
Remarkably balanced for the price. Caramel and toffee intermingle with dried fruit and a clean oak structure. The cane juice base gives it a lighter, more vegetal quality than molasses-based rums, and a subtle spice — allspice, clove — adds complexity. Medium body with a slightly dry grip.
Finish
Medium, with oak, dried fruit, and a clean fade of caramel and spice.

Port-au-Prince Daiquiri — 2 oz Barbancourt 8 Year · 0.75 oz fresh lime juice · 0.5 oz cane syrup · Shake hard with ice, double strain into a chilled coupe.
Food Pairing
Jerk chicken with mango chutney
The Gardère family has run Barbancourt since 1862, distilling fresh sugarcane juice — not molasses — in the double-distillation method and aging in French Limousin oak, creating a Haitian rhum tradition with no real parallel.

Knob Creek 12 Year Old Kentucky Straight Bourbon Whiskey
Knob Creek
Twelve years in the Kentucky rickhouse gave this bourbon a heft and depth that its younger siblings can only aspire to. It's not a sipper that flatters — it challenges, rewards patience, and demands your attention. A textbook example of what extended aging does to a high-rye mash bill.

Pueblo Viejo Blanco Tequila
Pueblo Viejo
Pueblo Viejo proves that integrity doesn't require a premium price tag. This is an honest, additive-free blanco that punches well above its weight class. It's the kind of tequila that makes you question what you're paying for elsewhere — direct, expressive, and built for both sipping and mixing.

Waterford Ballymorgan Edition 2.1 Single Malt Irish Whiskey
Waterford
Waterford's terroir-driven approach is on full display. The Ballymorgan 2.1 is a whiskey that tastes like it came from somewhere specific — and that specificity is the whole point. It's intellectual without being cold, expressive without leaning on cask influence. A whiskey for anyone who believes place matters.

Few American Gin
FEW Spirits
FEW American Gin doesn't apologize for its grain character — it leans into it. The result is a gin that bridges the gap between juniper-forward London Dry tradition and the broader flavor ambitions of American craft distilling. It's an excellent Martini gin with enough personality to stand up to bolder cocktail applications.

Rhum Clément Cuvée Homère Rhum Agricole Vieux
Rhum Clément
Cuvée Homère is Clément's tribute to founder Homère Clément, and it showcases what extended aging does to quality rhum agricole. The cane character remains at the foundation, but the oak and oxidative aging add layers that rival fine cognac in complexity. This is a sipping rum that demands — and rewards — your full attention.

Hampden Estate Aged 5 Years Single Jamaican Rum
Hampden Estate
The 5-Year expression sits in Hampden's sweet spot — enough age to integrate the distillery's famously high ester count, but young enough to preserve the raw tropical intensity. This is rum for people who want flavor with conviction. It rewards attention and handles mixing with authority.

Clairin Communal Le Rocher
Clairin
Clairin Le Rocher is fermented with wild yeast, distilled from fresh sugarcane juice on rudimentary equipment, and bottled without adjustment. The result is one of the most expressive unaged cane spirits in the world. It's raw, complex, and utterly unlike anything from the industrial rum world—a direct transmission of terroir.
