Glendronach 21 Year Old Parliament
GlenDronach · GlenDronach Distillery
Parliament earns its name through the gravity and deliberation of two decades in oloroso and Pedro Ximénez sherry casks. This is GlenDronach at its most authoritative — sherry-forward without sweetness fatigue, and layered enough to reward an hour of slow sipping.
Nose
Dense dried fruit — dates, figs, and raisin — lead the way, with a current of dark chocolate and floral rosewater beneath. Clove spice and orange marmalade emerge with time, and a faint earthy leather note lurks in the background.
Palate
Rich and full, with layers of caramel-drenched sherry fruit, cocoa, and hazelnut. The oak integration is seamless at 21 years, providing structure without bitterness. A buttery mouthfeel carries honeyed malt and dried apricot through the midpalate.
Finish
Exceptionally long, with dried fruit, clove, and a slow fade of dark cocoa into woody spice. The sherry influence lingers without dominating.

Food Pairing
The whisky's deep sherry fruit and cocoa notes intertwine naturally with a bittersweet chocolate torte, while candied orange on the plate mirrors the marmalade notes on the nose.
Nestled in the East Highlands near Huntly, GlenDronach has used floor maltings and sherry cask maturation since 1826, earning a reputation as one of Scotland's great sherry-matured single malts.

Rhum J.M 10 Year Old Rhum Agricole Vieux
Rhum J.M
Distillerie J.M sits on the volcanic slopes of Mont Pelée where sugarcane is pressed fresh and fermented with wild yeasts. At ten years, the raw agricole power has been tempered by tropical aging into something poised and layered — a rhum that never forgets its cane origins but has learned patience.

Chattanooga Whiskey Cask 111 High Malt Straight Bourbon Whiskey
Chattanooga Whiskey
Chattanooga Whiskey has built its identity around experimental mash bills, and Cask 111 is the proof of concept distilled to its essence. The high malt proportion delivers a texture and sweetness profile unlike traditional bourbons, rewarding drinkers who want something genuinely different without sacrificing depth.

Capreolus Damson Eau de Vie Gin
Capreolus
Barney Wilczak's one-man distillery applies the logic of eau de vie — capture fruit in its purest form — to gin production. The result is a gin with unusual depth and texture, where the base spirit is a feature, not an afterthought. Distinctive without being eccentric.

Tierra Noble Blanco Tequila
Tierra Noble
Tierra Noble's blanco delivers a textbook expression of well-cooked lowland agave without any additives muddying the picture. It is pure, approachable, and honest — the kind of tequila that reminds you why blanco can be the most revealing category.

Deanston 14 Year Old Single Malt Scotch Whisky
Deanston
Deanston 14 is a Highland malt that earns its place through texture and restraint rather than volume. The unpeated barley, dried in a gentle kiln, lets the distillery's clean spirit character shine. Non-chill filtered and bottled at a sensible strength, it rewards patience.

Glenfarclas 21 Year Old Highland Single Malt Scotch Whisky
Glenfarclas
Glenfarclas remains family-owned and stubbornly traditional, and this 21 Year is the quiet proof of that patience. It's a Speyside that refuses to shout — the sherry influence is deep but never cloying, and the space between its fruit and its structure is where the whisky truly communicates its age.

Glenfiddich 14 Year Old Bourbon Barrel Reserve
Glenfiddich
This is Glenfiddich at its most composed — the extra two years beyond their standard 12 and the exclusive bourbon cask maturation create a whisky of quiet confidence. It doesn't chase complexity; it arrives there naturally through patience. A Speyside malt that proves elegance needs no embellishment.

Benriach The Twelve Year Old Three Cask Matured Speyside Single Malt Scotch Whisky
Benriach
