Tasting Notes

Nose

Rich caramel and toasted malt open the nose, followed by dark cherry and a thread of baking spice. There is a subtle nuttiness underneath, almost like pecan brittle, with faint orange peel at the edges.

Palate

Full-bodied and chewy, with brown spices, butterscotch, and cocoa arriving in quick succession. The high malt content asserts itself as a biscuity, cereal-grain sweetness that balances the cask-strength heat. Leather and charred oak emerge toward the midpalate.

Finish

Long and warming, with lingering charred oak, malt, and a final whisper of dark chocolate. The spice fades slowly into toasted grain.

Food Pairing

The bourbon's malt backbone and charred oak tannins cut through the fatty richness of smoked pork belly, while the maple glaze echoes the whiskey's butterscotch sweetness.

The Story

Founded in 2011 in a city that had been dry for over a century, Chattanooga Whiskey's experimental distillery on the south side of the Tennessee River produces over 100 mash bills annually, with Cask 111 representing their flagship high-malt vision.
