Midleton Dair Ghaelach Bluebell Forest Tree No. 6
Midleton · Midleton Distillery
The Dair Ghaelach series represents Midleton's most ambitious exploration of terroir in Irish whiskey. The Bluebell Forest edition demonstrates how native Irish oak — sessile oak harvested from a single estate — can completely reshape a mature pot still whiskey. This is Irish whiskey pushing its own boundaries.
Nose
Lush orchard fruit and raw honeycomb open the glass, followed by toasted hazelnut and gentle vanilla. The native Irish oak contributes something entirely unique — a spicy, almost eucalyptus-like woody character that standard bourbon barrels never achieve. Faint rosewater adds elegance.
Palate
Viscous and commanding at cask strength. The pot still spice is front and center — clove, white pepper, baking spice — wrapped in rich butterscotch and dried fruit. The virgin Irish oak imparts a tannic, woody grip that gives the whiskey remarkable structure, while the underlying creaminess of the Midleton distillate keeps everything in check.
Finish
Long and drying with persistent clove spice, toasted wood, and a lingering honey sweetness that refuses to fade.

Food Pairing
The whiskey's honey richness and clove spice complement the rendered fat of seared duck breast, while a wild honey glaze echoes the native oak's tannic, aromatic grip.
Finished in virgin Irish oak casks crafted from sessile oaks felled in the Bluebell Forest on the Ballaghtobin Estate in County Kilkenny, this whiskey is Midleton's attempt to root Irish whiskey in Irish wood.

Hernö High Coast Terroir Gin 2023 Edition
Hernö
Hernö has built its reputation on textbook juniper-forward gins, and this terroir-focused edition is no exception. The Swedish botanicals give it a distinctly Nordic character — clean, herbal, and slightly wild — while the distillation technique ensures every ingredient reads clearly on the palate. A gin for gin lovers.

Talisker 30 Year Old Single Malt Scotch Whisky
Talisker
This is Talisker at its most contemplative. Thirty years on Skye has softened the distillery's volcanic character into something almost meditative, but the maritime soul remains. It's the cinder and the dew made literal — smoke meeting sea mist across decades of patient aging.

Foursquare Patrimony Exceptional Cask Selection
Foursquare
Richard Seale's Patrimony is one of Foursquare's most ambitious releases. Fourteen years of aging at cask strength in Barbados — where angel's share is ruthless — concentrates everything into a dense, rewarding experience. It's a rum that demands attention and rewards patience, standing comfortably alongside the finest aged spirits in the world.

Fuenteseca Cosecha 2016 Blanco
Fuenteseca
A vintage-dated blanco that captures a single moment in the agave's life — proof that unaged tequila can carry as much complexity and contradiction as any extra añejo.

The Legendary Dark Silkie Irish Whiskey
The Silkie
A characterful, sherry-and-peat-tinged blend that punches well above its price — a modern echo of Donegal's historic distilling character and worth keeping on the shelf.

Shortcross Single Malt Rye & Malt Cask
Shortcross
A quietly confident single malt that rewards slow contemplation — the rye cask influence gives it a distinctive spine without overwhelming Shortcross's estate-grown character.

Dunville's Very Rare 18 Year Old Single Malt PX Cask
Dunville's
A masterclass in restrained PX finishing — the cask enriches rather than smothers, and the 18 years of prior maturation give the spirit the backbone to hold its own. Beauty pulled from a brand that spent a century in the dark.

Waterford Sheestown Edition 3.1 Single Malt Irish Whiskey
Waterford
Waterford's terroir-obsessed approach finds clear expression here. The Sheestown farm's particular soil profile — heavy clay over limestone — translates into a whiskey with genuine mineral identity. This is Irish whiskey that asks you to taste the field, not just the barrel.
