Fuenteseca Cosecha 2016 Blanco
Fuenteseca · Distillery La Tequileña
A vintage-dated blanco that captures a single moment in the agave's life — proof that unaged tequila can carry as much complexity and contradiction as any extra añejo.
Nose
Bright cooked agave leads, layered with lime zest, green apple skin, and a whisper of white pepper. Underneath sits a wet-stone minerality and faint olive brine — the counterpoint that gives the spirit its tension.
Palate
Silky and full-bodied on entry, opening to sweet roasted agave fiber, crushed pineapple, and cracked black pepper. Mid-palate turns savory with green herbs, chalky earth, and a saline lift that balances the ripe fruit sweetness.
Finish
Long and layered — warm cinnamon and citrus pith fade into a mineral, almost briny echo. The heat is gentle despite the elevated proof.

Cocktail Suggestion
The Highland Paloma — 2 oz Fuenteseca Cosecha 2016 Blanco, 0.5 oz fresh lime juice, 0.25 oz agave syrup, pinch of sea salt, topped with 3 oz fresh pink grapefruit soda. Build in a chilled highball over ice, stir gently, garnish with a grapefruit twist and a sprig of thyme.
Food Pairing
Grilled octopus with charred lemon, smoked paprika, and green olive tapenade — the brine and char echo the tequila's mineral and savory undertones.
Bottled by third-generation agave grower Enrique Fonseca, whose family has farmed the Los Altos highlands since the 1940s, this cosecha series preserves the character of a specific harvest year without any wood interference.

The 2022 vintage showcases Ocho's commitment to single-estate terroir — each year's release tastes different because the agave comes from a different rancho.
