The farmer's choice of seed, the distiller's first cut from the still, the cooper's selection of raw timber — these opening acts determine everything that follows. The products in today's issue share a common thread: each one reveals how profoundly the initial conditions of production define the final character of what we drink.

Brothers Robert and Jonathan Likarish built Ironroot Republic in the Red River Valley of North Texas, drawing on their family's winemaking heritage and a fascination with heirloom grains to craft bourbon that reflects the extremes of the Texas climate.

Finish: Long and warming, with charred oak and dark cherry fading into lingering butterscotch and a touch of tobacco.

Distilled on the windswept Antrim coast at a site licensed in 1608, where triple-distilled malt has been quietly shaped by Atlantic air and oloroso casks for over four centuries.

Gin Bombay Sapphire London Dry Gin
Distilled at the sustainably restored Laverstoke Mill in Hampshire, Bombay Sapphire uses a Carterhead still that passes spirit vapor through a perforated copper basket of ten botanicals, extracting flavor through gentle infusion rather than direct boiling.

The Clarke family has operated Worthy Park Estate in Jamaica's Lluidas Vale since 1670, making it one of the oldest continuously operated sugar estates in the Caribbean, and their pot-still rum program draws on centuries of unbroken tradition.
