Irish Whiskey Midleton Dair Ghaelach Bluebell Forest Tree No. 6
Finished in virgin Irish oak casks crafted from sessile oaks felled in the Bluebell Forest on the Ballaghtobin Estate in County Kilkenny, this whiskey is Midleton's attempt to root Irish whiskey in Irish wood.

Finish: Long and drying with persistent clove spice, toasted wood, and a lingering honey sweetness that refuses to fade.
Pair with: The whiskey's honey richness and clove spice complement the rendered fat of seared duck breast, while a wild honey glaze echoes the native oak's tannic, aromatic grip.
Tequila Fuenteseca Cosecha 2016 Blanco
Bottled by third-generation agave grower Enrique Fonseca, whose family has farmed the Los Altos highlands since the 1940s, this cosecha series preserves the character of a specific harvest year without any wood interference.

Cocktail — The Highland Paloma — 2 oz Fuenteseca Cosecha 2016 Blanco, 0.5 oz fresh lime juice, 0.25 oz agave syrup, pinch of sea salt, topped with 3 oz fresh pink grapefruit soda. Build in a chilled highball over ice, stir gently, garnish with a grapefruit twist and a sprig of thyme.
Pair with: Grilled octopus with charred lemon, smoked paprika, and green olive tapenade — the brine and char echo the tequila's mineral and savory undertones.

Gin Hernö High Coast Terroir Gin 2023 Edition
Distilled by Jon Hillgren in a custom 250-liter copper pot still at Sweden's northernmost craft distillery, this terroir edition uses hand-picked wild botanicals foraged from the forests surrounding Härnösand on Sweden's High Coast.

Red Wine Clos Erasmus Priorat 2019
Founded in 1989 by Daphne Glorian on a steep terraced hillside of ancient llicorella slate in the village of Gratallops, Clos Erasmus is biodynamically farmed and produces barely 500 cases of this singular Priorat wine each vintage.

White Wine Movia Lunar Ribolla 2022
Crafted by Aleš Kristančič on his family's centuries-old Brda estate straddling the Slovenian-Italian border, Lunar is made without pressing, filtration, sulfur, or added yeasts — the grapes ferment whole on their skins for eight lunar months, then are decanted by the light of the full moon.
