Domaine Patrick Baudouin Savennières Les Girardieres 2021
Domaine Patrick Baudouin
Savennières is Chenin Blanc at its most demanding — structured, dry, and unyielding in youth. Patrick Baudouin farms biodynamically and lets the wine find its shape without forcing it. The 2021 offers mineral austerity now, but give it three to five years and it will repay patience generously. A charcoal-line wine if ever there was one.
Nose
Taut and mineral-driven, with green apple and citrus zest over a flinty, almost chalky base. A faint honeyed quality emerges with time in the glass.
Palate
Bone-dry and tensile. Apple and citrus form a lean, precise core, sharpened by the schist-derived minerality that defines Savennières. A woody, almost herbal undercurrent adds depth without weight, and a faint marzipan note surfaces on the second sip.
Finish
Long, dry, and stony, with green apple and a faint bitter almond quality that lingers.

Pan-seared pike-perch with beurre blanc
Patrick Baudouin abandoned a career in journalism to resurrect old Chenin Blanc parcels on the steep schist slopes of Savennières, farming biodynamically and vinifying with minimal intervention in the Loire Valley.

Domaine de la Garrelière Touraine Sauvignon Blanc Cendrillon 2023
Domaine de la Garrelière
This biodynamic Sauvignon Blanc from the southern Loire offers a study in transparency. François Plouzeau's estate, certified biodynamic since 2006, produces wines that taste like the soil they come from. The Cendrillon bottling is all tension and minerality—Sauvignon Blanc stripped to its essentials, with nothing to hide and nothing wasted.

Domaine Josmeyer Riesling Les Pierrets 2023
Domaine Josmeyer
Josmeyer's Les Pierrets vineyard produces a Riesling of crystalline purity, the kind of white wine that makes you reconsider everything you thought about Alsatian richness. The 2023 vintage brings a taut, energetic acidity that will carry this wine for several years, but it drinks beautifully now with its bright fruit and stony backbone. A textbook warm-vintage Alsatian Riesling.

Domaine Trimbach Gewürztraminer Alsace 2022
Trimbach
Trimbach's house style brings rigor to one of Alsace's most exuberant varieties. This Gewürztraminer has the aromatic intensity the grape demands, but the bone-dry finish and taut acidity keep it firmly on the food-friendly side. A benchmark for the varietal at an accessible price.

Domaine de la Quilla Muscadet Sèvre et Maine sur Lie 2023
Domaine de la Quilla
Muscadet is one of the wine world's great bargains, and this sur lie bottling from Domaine de la Quilla demonstrates why. The Melon de Bourgogne grape delivers a bracing, mineral-driven wine that is the definition of a food wine. Pair it with shellfish and you'll wonder why you've been spending more.
