Tasting Notes

Nose

Bright cooked agave leads, followed by fresh lime zest, green bell pepper, wet river stone, and a whisper of white pepper and jasmine.

Palate

Silky and full-bodied — cooked agave sweetness meets citrus oil, cracked black pepper, cucumber skin, and a mineral, almost saline core. A soft herbal thread of mint and eucalyptus emerges mid-palate.

Finish

Long, clean, and peppery, with lingering agave fiber, lime pith, and a cool minty coolness that fades slowly rather than snapping shut.

Altitude Paloma — 2 oz Volans Blanco, 0.75 oz fresh grapefruit juice, 0.5 oz fresh lime juice, 0.25 oz agave syrup, pinch of sea salt, top with 2 oz chilled grapefruit soda. Build in a tall glass over ice, stir gently, garnish with a grapefruit twist and a sprig of mint.

Founded by Enrique Fonseca protégé and industry veteran Ricardo 'Dr. Tequila' Gamarra, Volans is distilled at nearly 7,000 feet in the Jalisco highlands — where thinner air, cooler nights, and lower atmospheric pressure literally reshape how alcohol and aromatics behave inside the still.
