A cerebral, structural blanco that rewards patience. Not a crowd-pleaser — this is agave with its shoulders squared, meant for drinkers who want to feel the plant's architecture rather than have it softened for them.
Nose
A taut coil of fresh-cut agave fiber, wet river stone, and green bell pepper, giving way to lime peel, white pepper, and a saline mineral thread that pulls tight before releasing into softer notes of jasmine and honeydew.
Palate
Enters with tension — a chalky, mineral snap followed by cooked agave, cracked black pepper, and grapefruit pith. Midpalate opens into cucumber water, wet slate, and a whisper of vanilla bean. There's a coiled vegetal intensity that never quite tips into aggression.
Finish
Long, dry, and clean, with lingering white pepper, lime zest, and a mineral saltiness that fades slowly like breath after a held note.

Cocktail Suggestion
The Held Breath — 2 oz Fuenteseca Cosecha 2021 Blanco, 0.5 oz fino sherry, 0.25 oz Yellow Chartreuse, 2 dashes celery bitters. Stir with ice for 20 seconds — no more. Strain into a chilled coupe. Express a grapefruit peel over the surface and discard.
Food Pairing
Raw scallop crudo with lime, sea salt, and green olive oil; or a chilled cucumber and jicama salad with serrano and mint.
