El Pandillo Añejo Tequila

El Pandillo · Destiladora del Valle de Tequila (NOM 1438)

80 proof1-YearJalisco, Mexico
El Pandillo's añejo demonstrates how thoughtful aging can complement rather than bury agave character. Brick oven-roasted piñas and measured time in American oak produce a tequila that honors its raw material while showing real complexity.

Tasting Notes

Nose

Slow-roasted agave sweetness leads, backed by butterscotch, vanilla, and toasted oak. A faint trace of cinnamon and baking spice lingers beneath the cooked agave core.

Palate

Silky and well-integrated. Cooked agave remains the central thread, flanked by caramel, coffee, and a subtle peppery spice. The oak influence is present but restrained, letting the agave character speak.

Finish

Medium, with lingering vanilla, a whisper of smoke, and a pleasant minerality that recalls the volcanic soil of the Lowlands.

Cocktail Suggestion

Ember Paloma — 2 oz El Pandillo Añejo · 1 oz fresh grapefruit juice · 0.5 oz fresh lime juice · 0.5 oz agave nectar · 2 oz sparkling water · Build in a salt-rimmed highball glass over ice, stir gently, garnish with a charred grapefruit wedge.

Food Pairing

Slow-braised beef short ribs in Oaxacan mole negro with its blend of dried chiles, chocolate, and roasted spices. The mole's depth and bittersweet complexity mirror the tequila's coffee and caramel notes.

The Story

Produced by the Vivanco family at their small distillery in the Tequila Valley lowlands, where blue Weber agave is slow-cooked in traditional brick ovens for 48 hours before fermentation.
