Dalmore 15 Year Old Highland Single Malt Scotch Whisky

Dalmore · Dalmore Distillery

80 proof15 YearAlness, Highland, Scotland
Dalmore's 15-year-old demonstrates the distillery's signature approach to sherry cask management. The three-stage maturation — bourbon barrels, then Matusalem oloroso sherry casks, followed by Apostoles sherry casks — creates a layered, dessert-like whisky that somehow avoids heaviness. It rewards slow sipping.

Tasting Notes

Nose

Orange marmalade and dark chocolate open the nose with immediate richness. Dried fruit — dates and figs — mingle with a waxy quality and hints of hazelnut and old leather-bound books.

Palate

Silky and full, with caramel-coated dried fruit giving way to clove spice and cocoa on the mid-palate. The sherry cask influence is prominent but well-integrated, adding layers of dried stone fruit and gentle oak.

Finish

Medium-long, with lingering orange peel, malt sweetness, and a dusting of cocoa that fades gracefully.

Cocktail Suggestion

Highland Boulevardier — 1.5 oz Dalmore 15 · 1 oz Cocchi Vermouth di Torino · 0.75 oz Campari · Stir with ice, strain into a coupe, garnish with an orange twist.

Food Pairing

The concentrated orange and cocoa in the whisky echo a bittersweet dark chocolate tart topped with candied orange segments and a sprinkle of flaky sea salt.

The Story

Produced on the shores of the Cromarty Firth in the Scottish Highlands, Dalmore has been shaped since 1839 by some of whisky's most complex cask programs, overseen for decades by master blender Richard Paterson.

Barrell Craft Spirits

Barrell's Seagrass is a master class in multi-cask finishing done with restraint. The three cask influences don't compete — they collaborate, each contributing a distinct frequency to the final chord. At cask strength, it rewards patient sipping and a splash of water.

Midleton Dair Ghaelach Bluebell Forest Tree No. 6

Midleton

The Dair Ghaelach series represents Midleton's most ambitious exploration of terroir in Irish whiskey. The Bluebell Forest edition demonstrates how native Irish oak — sessile oak harvested from a single estate — can completely reshape a mature pot still whiskey. This is Irish whiskey pushing its own boundaries.

Talisker 30 Year Old Single Malt Scotch Whisky

Talisker

This is Talisker at its most contemplative. Thirty years on Skye has softened the distillery's volcanic character into something almost meditative, but the maritime soul remains. It's the cinder and the dew made literal — smoke meeting sea mist across decades of patient aging.

Hernö High Coast Terroir Gin 2023 Edition

Hernö

Hernö has built its reputation on textbook juniper-forward gins, and this terroir-focused edition is no exception. The Swedish botanicals give it a distinctly Nordic character — clean, herbal, and slightly wild — while the distillation technique ensures every ingredient reads clearly on the palate. A gin for gin lovers.
