Vale da Cana Grogue de Cabo Verde

Vale da Cana · Vale da Cana (Santo Antão)

80 proofNAS (Unaged)Santo Antão, Cabo Verde
A coiled, terroir-forward grogue that trades polish for authenticity. Not for those seeking sweetness — this is cane spirit as elemental expression.

Tasting Notes

Nose

Grassy sugarcane stalk snapped fresh from the field, green olive brine, damp volcanic earth, and a whisper of white pepper. Latent tension: hints of banana peel and unripe pineapple hover but refuse to bloom.

Palate

Oily, medium-bodied entry that tightens around cane fiber, lime pith, and warm river stone before releasing into softer notes of sugarcane syrup, cucumber skin, and a saline minerality unique to Santo Antão's terraced valleys.

Finish

Long, herbaceous, and slowly unwinding — cane grass, cracked pepper, and a lingering mineral warmth that trails off like heat leaving stone at dusk.

Cocktail Suggestion

The Coiled Spring — 2 oz Vale da Cana Grogue, 0.75 oz fresh lime juice, 0.5 oz cane syrup (1:1), 3 dashes celery bitters, 1 barspoon dry vermouth. Shake hard with ice, strain into a chilled coupe. Garnish with a lime peel expressed and dropped.

Food Pairing

Grilled octopus with smoked paprika, charred lemon, and Cape Verdean cachupa; or aged manchego with green olives.

The Story

Distilled in small copper stills on the terraced volcanic slopes of Santo Antão, where families have pressed sugarcane by trapiche since the 16th century, Vale da Cana bottles a spirit that carries the salt-wind and basalt of an archipelago most drinkers have never tasted.
