Rhum Saint James Coeur de Chauffe
Saint James · Distillerie Saint James
A masterclass in pot still agricole at full strength — Saint James captures only the central, purest portion of the distillate, and the result is a rhum of remarkable density and clarity. Essential for anyone seeking to understand what 'coeur de chauffe' truly means.
Nose
An assertive bouquet of crushed sugarcane stalk and grassy vetiver lifts from the glass, followed by ripe banana, candied lime peel, and a whisper of warm bread crust. Beneath the green vegetal core lies an oily, almost briny note — the unmistakable signature of the still's heart cut.
Palate
Full-bodied and oily on entry, with a rush of sugarcane juice sweetness immediately tempered by white pepper, green olive brine, and unripe mango. Mid-palate brings florals — orange blossom, jasmine — wrapped around a structural backbone of cane fiber and warm spice. The high proof carries the flavors rather than burning them.
Finish
Long and waxy, with lingering grassiness, anise, and a final mineral salinity that recalls the volcanic soils of Sainte-Marie. Drying, focused, and unmistakably agricole.
- Base Ingredient
- Fresh-pressed sugarcane juice (jus de canne) from Martinique-grown cane, AOC certified
- Distillation
- Single-column Creole still; only the 'heart of the heat' (coeur de chauffe) — the central portion of the distillation run — is retained, bottled unaged at full distillation strength
- Country
- Sainte-Marie, Martinique
Cocktail Suggestion
Heart of the Current — 1.5 oz Saint James Coeur de Chauffe, 0.75 oz fresh lime juice, 0.5 oz cane syrup, 3 dashes Angostura bitters. Shake hard with ice, strain into a chilled coupe, garnish with a lime wheel and a single basil leaf. A high-proof Ti' Punch in cocktail clothing.
Food Pairing
Grilled mahi-mahi with charred pineapple salsa and a side of plantain frites — the rhum's vegetal intensity and tropical fruit notes mirror and lift the dish without being overpowered.
Founded in 1765 by Père Lefébure at the Saint-Jacques monastery, Saint James is the oldest continuously operating rhum house in Martinique, and its iconic square bottle — patented in 1882 — was designed to survive the Atlantic crossing to thirsty Parisian cafés.

Tyrconnell 10 Year Old Madeira Cask Finish
Tyrconnell
The Madeira finish gives this Tyrconnell an extra dimension that its standard expressions don't reach. Ten years of maturation provides enough malt structure to stand up to the wine cask influence, and the result is an Irish whiskey with genuine layering. An underrated gem in the single malt category.

Clairin Communal Vaval
Clairin
Clairin Communal Vaval is rum stripped to its most honest expression — no aging, no blending across distilleries, no additives. Fritz Vaval's small operation in Cavaillon uses native yeast fermentation and direct-fire distillation to produce a spirit that tastes of exactly where it comes from. It's a masterclass in terroir-driven rum.

David Nicholson Reserve Kentucky Straight Bourbon Whiskey
David Nicholson
David Nicholson Reserve punches well above its modest price, offering layered complexity that rewards patient sipping. The 100-proof backbone gives it cocktail versatility without sacrificing neat-pour nuance. A workhorse bourbon that deserves more shelf attention.

Inverroche Classic Gin
Inverroche
Inverroche Classic demonstrates that terroir is not limited to wine. The wild fynbos botanicals hand-foraged from the Cape coastline give this gin a genuinely unique aromatic fingerprint. It is simultaneously familiar enough for a juniper-focused gin drinker and distinctive enough to reward close attention.

Foursquare Touchstone Exceptional Cask Selection
Foursquare
Richard Seale's Exceptional Cask Selection series continues to set the benchmark for aged Barbadian rum. Touchstone's 14 years of maturation in ex-bourbon and ex-Madeira casks produce a rum of formidable complexity and power. The cask strength bottling is non-negotiable — dilution is your prerogative, but the intensity at full proof is part of the statement.

Plantation Grande Réserve Barbados 5 Year Old Dark Rum
Plantation
Plantation Grande Réserve demonstrates how double-cask maturation creates complexity beyond what either environment could achieve alone. At this price, it delivers remarkable polish and makes an exceptional foundation for elevated rum cocktails.

Appleton Estate 30 Year Old Jamaica Rum
Appleton Estate
Thirty years in Jamaica's tropical climate is an extraordinary commitment — the angel's share alone makes this a rare proposition. Joy Spence, Appleton's master blender, has crafted a rum where the interval of aging has refined rather than flattened the spirit's personality. The Jamaican character remains unmistakable even under layers of oak maturity. This is patience rewarded in the glass.
