A raw, honest expression of Santiago's volcanic terroir made by the Rabelados religious community using ox-driven trapiches and wood-fired alembics. Uncompromising, place-specific, and quietly beautiful.
Nose
Green sugarcane juice, wet river stone, and crushed sage lead, followed by white pepper, unripe banana, and a faint whiff of goat's milk and hay. A saline coastal note curls beneath.
Palate
Vegetal and pointed — pressed cane, lime pith, and cucumber skin. Mid-palate turns earthier with a mineral, almost clay-like density, brightened by grassy anise and a flicker of green olive brine.
Finish
Dry, peppery, and long, with cane fiber, lingering herbal bitterness, and a mineral pull that keeps the mouth alive well after the swallow.
