Foursquare Sovereignty Exceptional Cask Selection
Foursquare · Foursquare Distillery
Richard Seale's Exceptional Cask series continues to set the benchmark for aged Barbadian rum. Sovereignty at 14 years balances power and refinement in a way that few spirits at this proof achieve. The Barbadian climate's intensity of maturation is the quiet force — what takes scotch 25 years happens here in half the time.
Nose
Rich toffee and dark chocolate immediately assert themselves, followed by dried stone fruit and well-worn leather. Beneath that, toasted oak and espresso notes emerge with time, alongside a hint of orange peel.
Palate
Full-bodied and intensely concentrated. Layers of molasses, roasted coffee, and bittersweet chocolate coat the palate, with dried fig and tobacco leaf building at the center. Despite the proof, the texture is remarkably polished — dense but not hot. A rum that demands to be sipped slowly.
Finish
Exceptionally long with lingering dark chocolate, charred oak, tobacco, and a final note of caramelized orange.
- Base Ingredient

- Distillation

Food Pairing
The torte's bittersweet intensity mirrors the rum's cocoa and coffee depth, while espresso cream amplifies the roasted notes. A pinch of Maldon salt on top bridges the rum's oak tannins.
Blended and bottled by fourth-generation master distiller Richard Seale at the Foursquare Distillery in St. Philip, Barbados, where the tropical heat accelerates cask interaction and concentrates flavor at a pace unmatched in cooler climates.

Bruichladdich The Botanist Islay Dry Gin Cask Aged
The Botanist
Taking the already place-driven Botanist and resting it in ex-Bruichladdich casks brings a new dimension. The wood doesn't overpower — it deepens. This is a gin that insists on its Islay identity at every turn, from wild botanicals foraged on the island to the whisky casks that finish the job.

Bunnahabhain Stiùireadair Islay Single Malt Scotch Whisky
Bunnahabhain
Bunnahabhain is Islay's quiet contrarian — unpeated by default, letting its coastal position do the talking. Stiùireadair (Gaelic for 'helmsman') showcases the distillery's house style: sherried richness tempered by sea air. A masterclass in understated Islay character.

Waterford Ballykilcavan Edition 3.1 Single Malt Irish Whiskey
Waterford
Waterford's obsessive focus on single-farm barley provenance makes each edition a terroir experiment. The Ballykilcavan 3.1 draws from a 14th-generation farm in County Laois, and the result is whiskey that tastes genuinely of a specific place. It challenges the idea that terroir belongs only to wine.

El Dorado
A profound showcase of the last operating wooden double pot still on Earth. Its opposing forces — sweet tropical fruit against dry, resinous funk — resolve into something singular and haunting. Essential drinking for anyone serious about heritage rum.

Hampden Estate 46 Pure Single Jamaican Rum
Hampden Estate
Hampden Estate 46 is the distillery's gateway expression, and it's a generous one. The ester-forward Jamaican character is fully present but accessible, making this a bottle that works equally well neat or as the backbone of a serious cocktail. It represents genuine terroir-driven rum at a fair price.

Chalong Bay Pure Series Original
Chalong Bay
A quietly confident white rum that trades the funk of Caribbean pot stills for a serene, aromatic clarity — an ideal introduction to non-Antillean cane-juice distillation and a versatile cocktail base with genuine terroir.

Avuá Amburana Cachaça
Avuá
A gateway into artisanal cachaça that showcases how one distinctly Brazilian wood can transform sugarcane spirit into something haunting and unforgettable. Rough sugarcane origins, refined by native timber — beauty earned through untamed materials.
