El Dorado Single Still Enmore 1996
El Dorado · Vale da Paul
A monumental single-still Demerara that showcases the Enmore wooden Coffey still at its most articulate — dense, aromatic, and quietly ferocious. Essential for serious rum collectors seeking the true character of Guyana's heritage stills.
Nose
A coiled, brooding nose of dark molasses, aged pipe tobacco, and green banana skin, laced with sandalwood, licorice root, and a distinctly resinous funk that hints at the ancient wooden Coffey still. Time reveals dried fig, bitter orange peel, and a whisper of camphor.
Palate
Enormously concentrated and structurally taut — muscovado sugar, blackstrap molasses, and burnt caramel collide with saline olive brine, leather, and dark-roasted coffee. The Enmore signature emerges mid-palate: pencil shavings, aromatic wood tar, and dried pineapple straining against the tropical-aged tannins.
Finish
Extremely long and slow-releasing, unfurling notes of cocoa nib, tobacco leaf, and lingering wood spice, with a final flicker of stewed dark fruit and eucalyptus that refuses to fade.
- Base Ingredient
- Demerara sugarcane molasses
- Distillation
- Single-distilled on the Enmore wooden Coffey (continuous column) still, a mid-19th-century greenheart-wood still originally from the Enmore Estate; matured entirely in ex-bourbon oak casks in tropical Guyanese climate.
- Country
- Georgetown, Guyana
Cocktail Suggestion
The Release Valve — 1.5 oz El Dorado Single Still Enmore 1996, 0.5 oz Amaro Meletti, 0.25 oz demerara syrup (2:1), 2 dashes Angostura bitters, 1 dash orange bitters. Stir with ice for 30 seconds; strain into a chilled coupe. Express an orange peel over the surface and discard. No garnish — let the rum speak.
Food Pairing
Aged Gouda with fig preserves, or a dark chocolate torte with sea salt and candied orange peel.
Distilled in 1996 on the Enmore wooden Coffey still — one of the last operating heritage stills in the world, dating to the 19th century and now housed at Diamond after Enmore's closure — and patiently matured under Guyana's tropical sun before its unhurried release nearly a quarter century later.

Knappogue Castle 21 Year Old Single Malt Irish Whiskey
Knappogue Castle
Twenty-one years in bourbon casks have given this whiskey remarkable depth without losing the clean Irish malt character. The extended aging adds woody complexity that never becomes overbearing. A meditative pour for those who appreciate old-age finesse.

St. George Dry Rye Gin
St. George Spirits
A gin that dares you to sip it neat. The rye backbone gives it structural gravitas most London Drys can't touch — extraordinary in a Negroni or Martinez, where its grain character bridges vermouth and juniper into something singular.

Bower Hill Barrel Reserve Straight Bourbon Whiskey
Bower Hill
An overlooked small-batch sourced bourbon that punches well above its price point — structured, spice-forward, and quietly complex, ideal for drinkers who prize backbone over gloss.

Benriach The Twelve Year Old Three Cask Matured Speyside Single Malt Scotch Whisky
Benriach
Benriach's three-cask maturation strategy—bourbon, sherry, and port—creates layers of flavor that unwind gradually. The 46% ABV without chill filtration preserves texture and nuance. This is a Speyside malt that rewards the patient sipper.

Rhum Clément Select Barrel Rhum Agricole
Clément
Clément Select Barrel is an excellent entry point into aged agricole rhum. The barrel aging tames the raw grassy intensity without erasing it, creating a spirit that bridges the gap between agricole purists and aged rum lovers. At its price, it's one of the best values in the category.

Clairin Communal Sajous Ansyen 49 Mois
Clairin
Michel Sajous grows his own sugarcane — a rare practice even among clairin producers — and this 49-month aged expression shows how Haitian rum transforms with time in barrel. The wild, untamed character of clairin remains, but the oak provides architecture. This is terroir-driven rum at its most expressive.

Novo Fogo Two Years Barrel-Aged Cachaça
Novo Fogo
A benchmark for accessible aged cachaça: bright enough for a Caipirinha upgrade, structured enough for neat sipping. It rewards drinkers curious about how minimal oak influence can sharpen rather than mask a cane spirit's identity.

Foursquare Exceptional Cask Selection Mark XXIV 'Equipoise'
Foursquare
Richard Seale continues to set the standard for unadulterated Barbadian rum with this release. Equipoise earns its name — it's 60% ABV but drinks with a composure that belies the proof. The interplay of pot and column still distillates gives it both weight and elegance. A serious rum for serious drinkers.
