Clairin Communal Le Rocher Ansyen 46 Mois

Clairin · Distillerie Le Rocher

Clairin occupies its own category — neither French agricole nor industrial molasses rum, but something shaped by Haiti's wild sugarcane and artisanal distillation traditions. The extended aging adds structure without erasing the untamed character that makes Clairin compelling. This is rum at its most honest.

Tasting Notes

Nose

Dried tropical fruit and sugarcane funk lead, with an undercurrent of leather and roasted nuts. A wild, funky quality — part agricole, part something entirely Haitian — gives it a feral beauty.

Palate

Rich and textured, with muscovado sugar and dried fruit layered over a backbone of oak and tobacco. The agricole-like grassiness is still present but mellowed, and there's a surprising citrus brightness that lifts the heavier notes.

Finish

Long and complex, with leather, spice, and a lingering tropical fruit sweetness that fades slowly into dry oak.

Food Pairing

The funky, leathery depth of the clairin stands up to the bold allspice, Scotch bonnet, and thyme of Jamaican jerk seasoning, while its tropical fruit sweetness tempers the heat.

The Story

Distilled by Michel Sajous at the small Le Rocher distillery in Pignon from native Haitian sugarcane juice, this clairin was aged for 46 months and bottled by Velier's Luca Gargano as part of the Ansyen aged series.

Hernö High Coast Terroir Gin 2023 Edition

Hernö

Hernö has built its reputation on textbook juniper-forward gins, and this terroir-focused edition is no exception. The Swedish botanicals give it a distinctly Nordic character — clean, herbal, and slightly wild — while the distillation technique ensures every ingredient reads clearly on the palate. A gin for gin lovers.

Talisker 30 Year Old Single Malt Scotch Whisky

Talisker

This is Talisker at its most contemplative. Thirty years on Skye has softened the distillery's volcanic character into something almost meditative, but the maritime soul remains. It's the cinder and the dew made literal — smoke meeting sea mist across decades of patient aging.

Midleton Dair Ghaelach Bluebell Forest Tree No. 6

Midleton

The Dair Ghaelach series represents Midleton's most ambitious exploration of terroir in Irish whiskey. The Bluebell Forest edition demonstrates how native Irish oak — sessile oak harvested from a single estate — can completely reshape a mature pot still whiskey. This is Irish whiskey pushing its own boundaries.

Foursquare Patrimony Exceptional Cask Selection

Foursquare

Richard Seale's Patrimony is one of Foursquare's most ambitious releases. Fourteen years of aging at cask strength in Barbados — where angel's share is ruthless — concentrates everything into a dense, rewarding experience. It's a rum that demands attention and rewards patience, standing comfortably alongside the finest aged spirits in the world.
