Cocktail Suggestion

The Black Hexagon — 2 oz The Sexton Single Malt, 0.5 oz Pedro Ximénez sherry, 2 dashes orange bitters, 1 dash chocolate bitters. Stir with ice for 30 seconds, strain into a chilled coupe, and express an orange peel over the surface before dropping it in.

Food Pairing

Aged Manchego with quince paste, dark chocolate truffles, or a slice of fig and almond tart.

The Story

Created by master blender Alex Thomas — one of only a handful of women holding that title in Irish whiskey — The Sexton is fully matured in Oloroso sherry butts and bottled in a distinctive black hexagonal flask inspired by the basalt columns of the nearby Giant's Causeway.

Hinch 10 Year Old Sherry Cask Finish Irish Whiskey

Hinch

Hinch proves that Northern Ireland's new wave of distilling can compete on quality, not just novelty. The sherry finish adds genuine dimension to an already well-aged blend, delivering complexity that punches above its price point. A sleeper worth tracking down.

Waterford Ballymorgan Edition 2.1 Single Malt Irish Whiskey

Waterford

Waterford's terroir-driven approach is on full display. The Ballymorgan 2.1 is a whiskey that tastes like it came from somewhere specific — and that specificity is the whole point. It's intellectual without being cold, expressive without leaning on cask influence. A whiskey for anyone who believes place matters.

Tullamore D.E.W. XO Caribbean Rum Cask Finish

Tullamore D.E.W.

This is a cask finish that actually earns its secondary maturation. The demerara rum barrels add genuine complexity rather than mere sweetness, and the underlying triple-distilled blend has enough structure to hold it together. At this price, it's one of Irish whiskey's better-kept secrets.

Clonakilty Single Grain Bordeaux Cask Finish Irish Whiskey

Clonakilty

Clonakilty's grain whiskey is sourced from barley grown on the Scully family's own coastal farm, and the Bordeaux cask finish adds a vinous dimension that elevates an otherwise straightforward spirit. It's approachable without being simple — a bridge between Irish tradition and continental influence.
