A quietly confident single grain that uses its stout-cask finish for definition rather than novelty — the sweetness of the grain and the roast bitterness of the cask meet in genuine equilibrium.

Tasting Notes

Nose

Toasted cereal and vanilla lead, followed by a wave of coffee grounds, cocoa nib and dried orange peel. A whisper of malt loaf and warm brioche gives the aromatics a bakery-shop warmth.

Palate

Silky arrival — soft toffee, honeyed grain and cream — pivots into darker roasted coffee, bittersweet chocolate and a stout-derived note of burnt sugar and hops. Mid-palate carries a fine spice of clove and dry oak, with a subtle citrus lift keeping it from settling too heavy.

Finish

Medium length, warming and drying, resolving on espresso crema, cocoa dust and a faint orange-rind bitterness that lingers without harshness.

Cocktail Suggestion

The Reconciled — 2 oz Hyde No. 8 Heritage Cask; 0.5 oz cold-brew coffee concentrate; 0.25 oz demerara syrup; 2 dashes orange bitters. Stir over ice for 20 seconds, strain into a chilled coupe, and express an orange peel over the surface before dropping it in.

Food Pairing

Aged Coolea cheese with oatcakes and a spoon of stout-fig chutney; or a dark-chocolate torte with candied orange.

The Story

Named for the year the Hyde family first settled in West Cork, the No. 8 reflects five generations of Cork trading heritage, finished in casks that once held Ireland's iconic dry stout.

Boann The Whistler Marsala Cask Finish Single Pot Still

The Whistler

A confident, characterful pot still that uses Marsala not as makeup but as memory — the cask's sun-baked history bleeds into every sip. Among the most distinctive independent Irish releases of recent years.

Waterford Micro Cuvée Lomhar Single Malt Irish Whiskey

Waterford

Waterford's obsession with terroir reaches its most concentrated expression in the Micro Cuvée range. Lomhar gathers whiskey from their most expressive single farm origins into a blend that amplifies rather than averages their character. It's Irish whiskey for people who care about where grain is grown, not just where it's distilled.

Teeling Brabazon Bottling Series 04 Muscat Casks

Teeling

The Brabazon Series is Teeling's exploration of wine cask finishing, and this Muscat expression is the most harmonious yet. The dessert wine casks could easily overwhelm, but the distillery's spirit is robust enough to absorb the influence and come out more complex for it. A rewarding pour for anyone who thinks Irish whiskey can't do bold.

Bushmills Red Bush Irish Whiskey

Bushmills

Red Bush is Bushmills' deliberate lean into bourbon barrel maturation, and it works as a gateway whiskey for those crossing over from American spirits. It won't challenge seasoned Irish whiskey drinkers, but it delivers honest craft at a price that makes everyday drinking guilt-free. A solid foundation pour.
