There's a word we borrow from the French because English never found its own: terroir. It means, loosely, the taste of place. But it runs deeper than geography. It's the limestone aquifer feeding a Kentucky distillery's water source. It's volcanic soil in Jalisco that changes the sugar profile of agave. It's a vineyard's drainage, a peat bog's ancient memory, a Caribbean cane field's mineral uptake. This issue is about what the ground gives to the glass.

Bourbon Hotel Tango Straight Bourbon Whiskey
Founded by combat veteran Travis Barnes in Indianapolis, Hotel Tango became Indiana's first combat-veteran-owned distillery, drawing its water from the limestone-rich aquifers beneath the city's old industrial core.

Finish: Moderate length with lingering oak and a pleasant sweetness that fades into dry cereal grain.

Scotch Whisky Tullibardine 228 Burgundy Cask Finish
Situated at the foot of the Ochil Hills in Blackford, Tullibardine draws its production water from the Danny Burn, the same source that once supplied beer to King James IV's coronation in 1488.

Irish Whiskey Waterford Gaia 1.1 Organic Single Malt Irish Whiskey
Founded by former Bruichladdich chief Mark Reynier in a former Guinness brewery, Waterford's Arcadian series pushes terroir further still — Gaia is built exclusively from certified-organic Irish barley grown across a network of pioneering biodynamic and organic farms.

Finish: Medium-long and gently spiced, with lingering malt sweetness, citrus pith, and a clean herbal echo of cut grass.
Cocktail — The Biodynamic Sour — 2 oz Waterford Gaia 1.1, 0.75 oz fresh lemon juice, 0.5 oz organic wildflower honey syrup (2:1), 2 dashes chamomile tincture, 1 egg white. Dry shake, then shake with ice, double strain into a coupe, garnish with a single edible marigold petal.
Pair with: Seared scallops with brown butter, hazelnuts, and apple — the whiskey's honeyed malt and orchard-fruit lift mirror the dish's sweetness while the proof cuts the richness.

Tequila Tierra Noble Reposado Tequila
Founded by the Vivanco family on their own agave estate in the Jalisco highlands, Tierra Noble uses a gravity-flow distillery built into the hillside, allowing production to move without pumps from field to bottle.

Gin Lind & Lime Gin
Produced at the Port of Leith Distillery on Edinburgh's historic waterfront, Lind & Lime honors the Scottish naval surgeon Dr. James Lind, whose citrus experiments at sea changed medicine and, indirectly, the cocktail world.

Finish: Crisp and clean with lingering juniper and a dry, citrus-peel fade.
Cocktail — Leith Collins — 2 oz Lind & Lime Gin · 1 oz fresh lime juice · 0.75 oz simple syrup · 2 oz soda water · Shake gin, lime, and syrup with ice, strain into a tall glass with fresh ice, top with soda, garnish with a lime wheel.

Rum Clairin Communal Casimir
Faubert Casimir cultivates his own heirloom sugarcane in the sun-blasted hills of Barradères, Haiti, fermenting the juice with wild ambient yeast and distilling in a rudimentary copper pot still that has remained unchanged for generations.

Palate: Full-bodied for an unaged spirit. The agricole-like cane juice character is dominant, with layers of tropical fruit, green olive, and a faint minerality that tastes like the soil it grew in. There's a pleasant oiliness on the tongue.
Finish: Long and persistent with lingering banana, cane sugar, and a clean, slightly herbaceous close.
Cocktail — Ti' Punch Haïtien — 2 oz Clairin Casimir · 0.5 oz fresh lime juice · 0.25 oz cane syrup · Build in a rocks glass, stir briefly, add one large ice cube or serve neat.

Red Wine Château de Beaucastel Côtes du Rhône Coudoulet de Beaucastel Rouge 2021
The Perrin family's Coudoulet vineyard lies adjacent to their celebrated Châteauneuf-du-Pape estate, separated only by a small stream — the same stony, galets-roulés terroir producing a wine that overdelivers on its humble AOC classification.

Jean-Marc Roulot, also an accomplished actor, tends his family's prized Meursault vineyards with obsessive care, producing even his entry-level Bourgogne Blanc from old vines on the limestone and clay soils surrounding the village.
