Theme: Elevation Shapes Everything
From highland distilleries to mountain vineyards, altitude and exposure quietly reshape what ends up in the glass. This issue follows the ridgeline to find bottles shaped by the terrain above.
There is a line on every hill where conditions shift — where the air thins, temperatures swing wider, and the raw materials of fermentation develop a different character entirely. Distillers perched in high valleys work with water that cuts through granite before it reaches the mash tun. Vintners farming steep slopes harvest fruit that ripened slowly under ultraviolet stress, concentrating flavors that flatland fruit never develops.
Today's eight bottles share this thread of elevation and exposure. From a Kentucky distillery drawing limestone-filtered water to an Argentine vineyard above 4,000 feet, each producer has turned the challenge of their terrain into a defining advantage. The ridgeline at dusk is where the day's last light catches the glass.

Nestled in the glacial valley beneath Ireland's Wicklow Mountains, Glendalough is the country's first craft distillery of the modern era, drawing its identity — and its virgin oak finishing casks — from the ancient highland forests that ring the monastic ruins of St. Kevin.

Cocktail — The Upland Monk — 2 oz Glendalough Pot Still, 0.5 oz Bénédictine, 0.25 oz honey syrup, 2 dashes orange bitters. Stir with ice for 30 seconds, strain into a chilled coupe, express an orange peel over the surface and drop in.
Pair with: Roasted pork loin with apple-cider glaze and caraway-roasted parsnips — the whiskey's virgin-oak spice and orchard fruit mirror the caramelization on the pork while cutting the root vegetables' sweetness.

Tequila El Tesoro 70th Aniversario Mature Blanco
Crafted at Destilería La Alteña — founded in 1937 by Don Felipe Camarena and now stewarded by his grandson Carlos — where agave is still crushed partly by tahona, fermented with open-air wild yeasts, and distilled to proof in small copper pot stills perched high in the Arandas highlands.

Cooked agave takes center stage, bolstered by black pepper, lime pith, cracked green olive brine, and a mineral spine that speaks directly to the volcanic red clay of the highlands. A grassy, almost vegetal midpalate gives way to sweet baked pineapple and cinnamon.
Finish: Long, warming, and mineral-driven, with lingering agave, white pepper, and a saline edge that fades slowly into gentle citrus oil.
Cocktail — Altitude Paloma — 2 oz El Tesoro Blanco, 0.75 oz fresh pink grapefruit juice, 0.5 oz fresh lime juice, 0.25 oz agave syrup, pinch of sea salt, topped with grapefruit soda. Build in a highball over ice, stir gently, garnish with a grapefruit twist and a rosemary sprig.
Pair with: Grilled octopus with charred lime, smoked paprika oil, and a chilled cucumber-avocado salad — the tequila's minerality and citrus lift the smoky char while its creamy body echoes the avocado.

Gin Daffy's Small Batch Highland Gin
Distilled in small batches at Strathleven Distillery in the Scottish Highlands, Daffy's was conceived by a team of spirits enthusiasts who wanted to build a gin around juniper intensity and botanical precision.

Rum Ron Botran Reserva 15
Distilled from virgin sugar cane honey rather than molasses and matured in the crisp thin air of Quetzaltenango at 2,300 meters above sea level, Botran's solera reflects five generations of the Botran family's dedication to the Sistema Solera 1893, a method borrowed from Andalusian sherry bodegas and reimagined in the Guatemalan highlands.

Pair with: Dark chocolate flan, aged Manchego with quince paste, or a slow-braised mole negro.

Red Wine Zuccardi Valle de Uco Malbec 2021
Produced by the Zuccardi family at their gravity-flow winery in the Uco Valley, where vineyards climb above 1,200 meters along the Andean piedmont, drawing from alluvial soils rich in limestone and gravel.

Produced by the 130-year-old Cantina Terlan cooperative in Italy's Alto Adige, from the Winkl vineyard planted in porphyry soils at the base of the Dolomites where alpine breezes maintain aromatic intensity in the grapes.
