Irish Whiskey Hyde No. 1 President's Reserve 10 Year Old Sherry Cask Matured Single Malt
Founded by the Hyde family in West Cork in 2014 and named for Ireland's first president, Douglas Hyde, the brand builds its identity around long sherry finishes and coastal maturation — a small independent operation trading on patience rather than volume.

Cocktail — Añejo Old Fashioned — 2 oz Chamucos Añejo · 0.25 oz agave nectar · 2 dashes Angostura bitters · 1 dash orange bitters · Stir over ice, strain over large cube, garnish with orange twist.
Pair with: Slow-braised chicken thighs in a complex Oaxacan mole negro — the chocolate, chili, and spice in the sauce echo the tequila's dark cocoa, cinnamon, and oak character.
Gin Genevieve Genever-Style Gin
Created by Anchor's late master distiller Bruce Joseph as a nod to the malt-wine genevers that predated London Dry, Genevieve is distilled from a mash of wheat, barley, and rye and redistilled with the same botanicals as Junípero—a quiet historical bridge in a bottle.

The Vernant-Neisson family has operated their small distillery at the foot of Mont Pelée in Le Carbet since 1932, pressing their own estate-grown sugarcane and distilling in a single copper Savalle column still.

Palate: Full-bodied with remarkable concentration. Coffee and chocolate dominate the entry, transitioning into dried tropical fruits and oak-driven vanilla. The cane character is still unmistakably present, giving structure beneath the aged richness. Spice builds through the mid-palate with cinnamon and clove warmth.
Finish: Exceptionally long. Tobacco, leather, and toffee linger for minutes, with a final whisper of orange citrus and oak.
Pair with: A rich bittersweet chocolate tart with a buttery crust, topped with a scattering of Guérande fleur de sel — the salt opens up the chocolate's bitterness to meet the rum's cacao and toffee character.
Red Wine Bodegas Aalto 2021
Co-founded in 1999 by Mariano García — former winemaker at Vega Sicilia for 30 years — and Javier Zaccagnini, Aalto sources old-vine Tinto Fino from across Ribera del Duero's highest-elevation vineyards.

White Wine Domaine André Ostertag Pinot Gris Fronholz 2023
André Ostertag has farmed biodynamically in Epfig since the 1990s, and his Fronholz vineyard on calcareous sandstone produces some of Alsace's most texturally compelling Pinot Gris.
